2 Oz salad oil12 Oz fine diced red onion3 medium granny smith apples ½" dice6 Oz Brandy1 - 25 Oz container of Orchard Splash™ Apple Juice Concentrate6 Cup chicken stock2 Tsp dry thymeSalt & pepper to taste 6 Oz butter6 Oz flour Add butter and flour and cook on medium heat 4-5 minutes to create Roux. Cool for 5-10 minutes. Instructions for Savory Herb Brandy/Apple Sauce (Apple Brandy Sauce) In a medium/large sauce pot, add oil and heat pan lightly. Add onion and apples and sauté 4 minutes. Add Brandy to deglaze the pan. Add apple juice, stock, and seasoning. Bring up to simmer and cook for 5 minutes. Taste and adjust seasoning. Thicken with Roux and check final seasoning. This sauce can be held hot for service or heated to order. Serve with grilled pork chops, roast pork loin, chicken breast, or fish.
