25oz Orchard Splash 100% Apple Juice Concentrate

Savory Herb Apple Brandy Sauce

2 Oz salad oil
12 Oz fine diced red onion
3 medium granny smith apples ½" dice
6 Oz Brandy
1 - 25 Oz container of Orchard Splash™ Apple Juice Concentrate
6 Cup chicken stock
2 Tsp dry thyme
Salt & pepper to taste
  
6 Oz butter
6 Oz flour
  
Add butter and flour and cook on medium heat 4-5 minutes to create Roux. Cool for 5-10 minutes.
  
Instructions for Savory Herb Brandy/Apple Sauce (Apple Brandy Sauce)
  
In a medium/large sauce pot, add oil and heat pan lightly. Add onion and apples and sauté 4 minutes. Add Brandy to deglaze the pan. Add apple juice, stock, and seasoning. Bring up to simmer and cook for 5 minutes. Taste and adjust seasoning. Thicken with Roux and check final seasoning. This sauce can be held hot for service or heated to order. Serve with grilled pork chops, roast pork loin, chicken breast, or fish.
